GALANG FUUN

Tomato water:
2-3 ripe tomatoes
1 tbs. Tamarind powder
salt and msg

Cut up the tomatoes. Bring a large pot to a boil. Add the tomatoes and tamarind powder. Boil until tomatoes dissolves. Season according to taste with salt and msg.

Chili Paste:
1-2 cups dried red peppers
3-4 fresh chili peppers
2-inch fresh ginger
½ cup tomato water
2-3 tbs. fermented beans
½ bunch cilantro
salt and msg

Boil dried peppers until soft. Drain. Cut the ginger into ½ inch pieces. Char the ginger and fresh peppers on a grill. Blend or ground all the ingredients together with a little bit of tomato water. Add fermented beans, salt, msg and fresh cilantro. Blend well.

Gelatin squares:
1 pkg. rice flour
1 tsp. lime paste
11 cups water

Fill large pot with 8 cups water and bring to a boil. Put rice flour into a large mixing bowl. Add 3 cups water and mix well. Dissolve lime paste in a small bowl of cold water. Strain into the rice flour mixture. Pour mixture into the pot of boiling water. Cook for 15-30 minutes, stirring vigorously. Once mixture reaches proper consistency(silky threads dripping of your spoon), pour it out onto a large flat pan. Set it aside until it sets, then fill it to the top with cold water.
