CHAILLE PA

1 Catfish
2-3 Thai chili peppers
2-3 stems green onions
1 stalk lemongrass
salt, msg, padek, fish sauce and sugar

Bring a pot of salted water to a boil. Add fish, msg and padek. Cook until done then drain, reserving the broth. Meanwhile, roast chili peppers and green onions. Thinly slice lemongrass.

De-bone the fish and ground in a mortar along with the peppers, onions and lemongrass. Season with msg, a little sugar and fish sauce if needed.
